    Our Colombian - Valle de Cauca offers a sweet aroma, medium body and consistently smooth mouth-feel.
    When roasted to a Full City, the cup will yield very nice hints of caramel, cherry, and a subtle honey finish.

    The mission of Grounds for Health is to create sustainable and effective cervical cancer prevention and treatment programs in coffee-growing communities, with the goal of decreasing the rate of cervical cancer.
    In developing countries, cervical cancer kills more women than any other cancer.
    Over 80% of women newly diagnosed with cervical cancer live in these areas. Most have never been screened; many are diagnosed too late for recovery.

    Roast Level / Profile Notes:
    We prefer to roast our Organic, Shade Grown, Rainforest Alliance Colombian - Valle de Cauca to a Full City Roast which brings out the best overall quality, aroma and flavor.

    We are always happy to accommodate any roast level you prefer.
    The notes below illustrate how changing the roast will change the profile:
    • City Roast (light roast) - This roast level will highlight the fruit notes and acidity, while tempering the caramel and honey. Perfect if you prefer bright, snappy Colombian coffees.
    • Full City Roast (medium roast) - Will provide a bit deeper body with subtle milk chocolate notes, enhanced smoothness and overall balance.
      This is our Preferred Roast Level.
    • Darker Roasts - Will subdue the brightness, acidity and fruit while adding more bittersweet chocolate tones to the finish the darker you go.

    Additional Information
    The Finca Potosi farm, which produces our Colombian - Valle de Cauca, is located in Caicedonia at an elevation of approximately 5400 ft.
    After hand picking, the coffee cherries are moved from the farm by truck to the wet mill for de-pulping, a 48 hr fermentation process, and mechanical drying in silos. Once this processing is completed, the coffee is transported in parchment to the beneficio (dry mill), located in the center of Caicedonia for final milling, grading, and preparation for export.

    The farm is owned by the Herrera family which has been producing coffee for the past 40 years, ever since the patriarch of the Herrera family moved to the area.
    The Valle de Cauca region, also known as the Pacific Door of Colombia, is located in the western half of Colombia.
    It is well known for its beauty and is one of the country’s most important regions due to its abundance of natural resources. Perfect weather, the right altitude, family dedication and hard work are the ingredients for producing an excellent coffee that is shown in its cup.

    Flavor Observations
    One of our favorite Costa Rican coffees as it embodies all of the wonderful, well rounded qualities we like to find in the Costa Rican coffees we select.
    This is an excellent choice for any time of day.

    We found a very nice honey roundness in the cup, with notes of tangerine followed by a creamy sweet finish.
    Medium body, clean finish, very smooth.

    The aroma is warm and inviting, and no single attribute overwhelms another resulting in an extremely well rounded coffee you would expect.

    Roast Level / Profile Notes:
    We prefer to roast our Organic Shade Grown Costa Rican - La Amistad to a City Roast to highlight the high tones, character, optimum aroma and flavor.

    We are always happy to accommodate any roast level you prefer.
    The notes below illustrate how changing the roast will change the profile:
    • City Roast (light roast) - This is our preference and will highlight the tangerine notes and wonderful nuances of our Costa Rican - La Amistad.
      While this roast level will yield a bit brighter cup, it will still be incredibly smooth
    • Full City Roast (medium roast) - Will provide a deeper body with some subtle milk chocolate notes, enhanced smoothness and overall balance
    • Darker Roasts - Will subdue the brightness and fruit while adding more bittersweet chocolate tones to the finish the darker you go.

    Additional Information
    La Amistad Estate was established in 1940 by Jorge Zeledon Castro as a coffee farm and nature reserve that sits on over 23,000 acres located in the Talamanca Mountain Range on the border of La Amistad International Park.
    La Amistad is one of the largest private nature reserves in Central America. Clean, fresh water that runs from the rainforest to the farm is used to generate power to run the machinery and for the mill on site.

    Castro designated a portion of his land to 22 poor families to create their own coffee plantation—many are still farming the land today.
    La Amistad Estate provides housing and training for farmers and works to ensure that the government will continue to provide services and infrastructure in the area.

    In the late 1980’s, the Montero family, the current owners, began to cultivate the coffee organically.
    Between the parcels of coffee are bands of primary forest.

    Succulent and wonderfully smooth, extremely aromatic with distinctive notes of ripe strawberries.
    This is not your "every day" Yirgacheffe by a long shot.

    Flavor Observations

    If you are a fan of Ethiopian Coffees, don't deny yourself our Ethiopian Konga.
    I promise you will not be disappointed!

    This is one of the most exciting and unique Yirgacheffe coffees we have come across in quite a while.
    This is a Natural Processed coffee, meaning the bean is sun-dried with the fruit, full cherry, still on!
    The red cherries are selected with great care and dried on raised beds for outstanding quality and taste.

    The Natural Process imparts an incredibly clean, smooth, and sweet cup bursting with fruit tones, predominately strawberry.
    The aroma is equally amazing and you get the fruit sense even before roasting; but in the cup... WOW!
    ... And that is an understatement.


    We prefer to roast our Ethiopian Konga to a City or Full City Roast.
    but as always we are happy to accommodate any roast level you prefer.

    • City Roast - Will highlight the Fruity Notes
    • Full City Roast - Will provide an overall balance, and enhanced smoothness
    • Darker Roasts - Will subdue the brightness and fruit while adding subtle, more chocolaty tones to the finish.

    enabling us to acquire a selection of the most premium lots available.

    This Heirloom Ethiopian varietal Natural Yirgacheffe coffee is produced in the Konga Zone of Yirgacheffe, above 5,905 Feet.
    A major town in south-central Ethiopia, Yirgacheffe is located in the Gedeo Zone of the Southern Nations,
    one of the most famous coffee-growing regions in the country.
