This is a amazing Organic certified coffee from the Kahondo village in the Isale region of North Kivu in DR Congo.
This coffee is entirely of the Bourbon variety and is shade dried after an 18-24 hr fermentation process.
This process provides the complexity and wonderful depth that makes this a real find among African coffees.

General Flavor Observations
DR Congo - Kivu Kahondo

Our Congo Kivu Kahondo has a heavy body, deep berry tones, with hints of mandarin orange, stone fruit, and at lighter roasts, subtle hints of spice.
There is a lingering sweetness to this coffee which contrasts its mild yet sparkling acidity.
The body is full to heavy (depending on the roast), and the aroma is sweet and spicy with notes of stone fruit.
The mouth feel is full and solid and you will notice the fruit tones become more prominent as the cup cools.

I personally found this coffee really shines and produces the most depth and character when using a French press.
But any brewing method you prefer will yield a bold, complex, and vibrant experience.

Roast Level Profile Notes
DR Congo - Kivu Kahondo

Our favorite roast level is Full City (+) as it provides a heavy body marked with wonderful dark berry notes.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will change the profile:

City Roast (light roast)

An Adventurous choice. You will definitely get a more herbal quality here with high notes of orange and spice. The acidity is quite snappy and the aroma spicy. The body will be medium; more up front then tapering off to notes of red berry.

Full City Roast (medium roast)

This a good choice if you want to keep only origin characteristics that are not influenced by the roast. Full bodied and round on the palate with notes of caramel or perhaps toffee. As the cup begins to cool, definite notes of blackberry emerge and finished by a crisp yet mild apple-like acidity. A very nice roast level for this wonderful coffee.

Full City (+) Roast

This is our favorite roast as it yields a heavy body and an abundance of juicy, black currant and black berry. The mouth feel is syrupy and expansive. Deep berried tones, toffee aroma, and a mild acidity which leaves you with a tapered yet lingering finish. As the cup cools, the red fruit tones emerge. Complex and satisfying!

Vienna Roast

This roast will provide a very heavy body, with dark chocolate notes and a sweet dark berry finish.

French Roast

For those who enjoy a dark French Roast, this coffee can take it. You will experience notes of bittersweet dark chocolate, a syrupy and heavy body, a more pointed and lingering finish. Bold dark berry tones emerge as the cup cools.

The Kahondo washing station is located in Kahondo village in the Isale region of North Kivu in DR Congo. Kahondo was established in 2012 and is one of 5 washing stations belonging to the Virunga Coffee group.

Traceable to the Kahondo village, this amazing Congo coffee differs from other DR Congo coffees as it is personally pulped and washed by individual farmers in the village who grow the coffee.
Additionally, the coffee is Organic and hand picked.
