Elegant, Fruit Forward, Incredibly Smooth

This crop of Ethiopian Sidamo Guji is simply extraordinary.
While it provides the wonderful fruit forward qualities you would expect from a great Natural Processed Ethiopian coffee, I was astonished by its depth and smoothness. You will not typically find this quality in a Naturally Processed Ethiopian coffee, at least not to this degree.

General Flavor Observations
Ethiopian Natural Sidamo - Guji

Lighter roasts will highlight the strawberry-like fruit qualities, while the darker roasts will bring about more of a blueberry-like fruit. I should point out that it is unusual to find this kind of variation in fruit tones between roast levels.

The overall mouth feel is creamy; the finish soft, yet lingering; the fruit profiles vary depending on the roast level chosen.
In general, you will find the profile to be clean, fruity, and sweet, with great depth and smoothness.

In short, this is an absolutely astounding coffee that should not be missed!

Roast Level Profile Notes
Ethiopian Natural Sidamo - Guji

Ethiopian Naturals can have a wonderful complexity about them, and it is for this reason I have selected Full City for our default roast level.
However, I can wholeheartedly recommend Full City (+) as well.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast level will alter the profile:

City Roast (light roast)

As always, this is the choice if you're seeking to experience pure Origin Characteristics. Brighter strawberry fruit and a snappier acidity are prominent, but offset nicely by a mild chocolaty flavor and hints of malt. The finish is clean and sweet

Full City Roast (medium roast) - Preferred

I really like this roast level for this coffee as it offers a good balance between body and acidity. The mouth-feel is very creamy and super smooth. The wine-like notes of strawberry really shine but taper quickly into a rolling finish that lingers with notes of cocoa and sugar cane sweetness. While similar characteristics are present as with the City roast, the acidity is much more tempered and the depth and smoothness more prominent.

Full City (+) Roast

A silky-smooth mouth-feel and enticing aromatics will give way to a dominant fruit tone of blueberry. An increased sense of depth emerges, and the acidity is well tempered. Chocolate tones become slightly edgier (like baker's chocolate), the sweetness more like brown sugar, and the finish is soft yet pointed. If you enjoy notes of blueberry, then this will be the best roast level.

Darker Roasts

Not recommended as the darker roast levels will eclipse the attributes that make this such a wonderful coffee.

Additional Information
Ethiopian Natural Sidamo - Guji

The Sidamo region was formed following Ethiopia's liberation from Italy in 1942.
The indigenous people are known as the Sidama and thus the region was named Sidamo. It is not uncommon to find coffee from the region described as both 'Sidama' and/or 'Sidamo'.
The latter is technically more accurate while the former acknowledges the people.
