Genuine Antigua, Full bodied, Rich, Chocolaty

Fully Washed, Sun Dried

It's been a while since we've had a Genuine Antigua in house, and this is one that will not disappoint!
It comes from a small family-owned farm in the Antigua Valley of Guatemala known as Panchoy.
This is a Bourbon varietal that is grown at high altitudes in rich, fertile, volcanic soil.

General Flavor Observations
Guatemalan Antigua - Panchoy

This is a full-bodied coffee with notes of caramel, orange, and honey. The finish is deep and chocolaty.
Genuine Guatemalan Antigua coffees exhibit a fuller, perhaps heavier, body than most Central American coffees; lighter roasts will highlight the orange tones and darker roasts will highlight the velvety qualities.
No matter which roast level you choose, this Antigua will offer you a coffee with a big mouth-feel, plenty of flavor and a full, round cup.

For those who aren't familiar with Antigua coffees, they are largely considered to be one of the finest coffees produced in Guatemala.

Roast Level Profile Notes
Guatemalan Antigua - Panchoy

My preferred roast level for this lot of Guatemalan Antigua is Full City.
The other roast levels each offer something different and unique, so don't hesitate to give them a try!

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how the various roast levels will change the profile:

City Roast (light roast)

This roast level will provide notes of Graham cracker and raw sugar. The acidity is brighter with highlights of tangerine on the finish. Chocolate tones are present, but mild; it will take a darker roast to bring the chocolate tones to the forefront. Still, this is the best choice to experience pure origin characteristics.

Full City Roast (medium roast) - Preferred

The Full City roast level for this coffee is wonderful; a lingering aroma gives way to toasted caramel, milk chocolate, a full-bodied mouth-feel, mild acidity with notes of orange, and a sweet, smooth finish. For an over-all balance of characteristics, this is the choice!

Full City (+) Roast

This roast level is a very nice choice for a more velvety mouth-feel and deeper body. Dark chocolate tones emerge along with a tempered acidity (orange is still present), and the finish is quite silky and smooth. The cup flavor also presents a nice smoky quality that surrounds and complements. This would be a great choice for a French Press.

Vienna Roast

A Vienna Roast will provide a more focused flavor profile that is centered around bittersweet chocolate and a deep, full body. You will lose most of the fruit highlights, but gain a more pointed and lingering finish with a sweetness that is akin to molasses. This roast would be a perfect pairing with desserts or a rich meal.

French Roast

Not recommended.

The Antigua valley is surrounded by three volcanoes, Agua, Fuego, and Acatenango, which, over time, have provided soil that is rich in minerals and volcanic ash. It is this concentration of minerals and the fertile growing conditions that help to create a quality and uniqueness to the region's coffee production.
