We are so excited to have found this wonderful Guatemalan coffee. It has all of the attributes that we were searching for and it has 5 sustainable certifications!

Finca Ceylan, the farm that produces this coffee, is well respected for its social and environmental practices.
Finca Ceylan contributes to social projects such as the construction of housing, potable water, and education for the employee's children.
The farm has also created its own natural ecosystem to protect the natural forests and to preserve the different species of trees, plants, and animals that inhabit them.
Hunting and fishing are prohibited and the rivers and tributaries are protected as well.
The residue of the coffee milling process is used as an organic fertilizer.

All of this, plus keen attention to responsible growing and cultivating practices have produced an impressive, well-certified coffee with plenty of character!

General Flavor Observations
Organic Guatemalan - Ceylan

This Guatemalan Ceylan is a wonderful medium bodied coffee with abundant notes of milk chocolate and hints of toffee and orange.
The aroma has an appealing caramel and vanilla nuttiness; the mouth feel is solid and pleasing. The crisp, fruity acidity gives way to a soothing floral and creamy finish.

Although not quite as heavy bodied as an Antigua, I found this to be an exceptionally consistent coffee with plenty of character and flavor.
If you are a fan of Guatemalan coffees and are seeking sustainability as well, then you will not be disappointed.

Roast Level Profile Notes
Organic Guatemalan - Ceylan

Our favorite roast level is solidly a Full City roast.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will change the profile:

City Roast (light roast)

For those seeking to accentuate the brighter acidity and orange notes, this is the perfect choice. Notes of graham cracker, caramel, and cocoa are quite noticeable in the overall cup profile, but the finish is what shines. This light roast provides a very crisp and snappy acidity with plenty of orange and floral notes, a bit lighter body, and a clean, sweet finish.

Full City Roast (medium roast)

The best all around choice for balance and attributes. Not influenced by caramelized sugar, this medium roast will provide a very smooth medium bodied experience. The coffee surrounds the palate well with milk chocolate and notes of toffee and nuts. On the high end, the acidity is bright with orange but gives way to caramel and a soft creamy finish. As the cup cools, the fruit and floral notes will heighten.

Full City (+) Roast

Looking for a bit more body, a bit bolder, a bit more cocoa nib chocolate, a bit more syrupy mouth feel? This is your choice! The toffee and orange are still present, more apparent on the silky finish and as the cup cools.

Vienna Roast

This is the darkest roast we can recommend. Dark chocolate abounds, thicker richer body, but at the sacrifice of some of the brighter and higher toned nuances. Still, a good choice for after dinner or to serve with sweets.

French Roast

Not recommended.

Organic Guatemalan - Ceylan

The Echeverría family has owned this farm (Finca Ceylan) since 1870. It is located in Pochuta, Chimaltenango, south to the Atitlán coffee region.
Finca Ceylon and the Echeverría family are renowned, not only for the care, they take with their crops but also for the care they take with their employees.

Through this extra care they have earned the seal of approval from the Rainforest Alliance, the Smithsonian Migratory Bird Center, and UTZ (an organization that is focused on "better farming for better futures"), as well as organic certifications from the OCIA and USDA.

The farm hires local labor, generating jobs for people in the surrounding towns. Conscientious environmental practices are employed in and around the farm.
