    Fair Trade Organic, Natural Process.
    Succulent and wonderfully smooth, extremely aromatic with distinctive notes of ripe red berries.
    This is not your "every day" Yirgacheffe by a long shot.

    If you are a fan of Ethiopian Coffees, don't deny yourself our Ethiopian Konga.
    I promise you will not be disappointed!

    This is one of the most exciting and unique Yirgacheffe coffees we have come across in quite a while.
    This is a Natural Processed coffee, meaning the bean is sun-dried with the fruit, full cherry, still on!
    The red cherries are selected with great care and dried on raised beds for outstanding quality and taste.

    The Natural Process imparts an incredibly clean, smooth, and sweet cup bursting with red berry fruit tones.
    The aroma is equally amazing and you get the fruit sense even before roasting; but in the cup... WOW!
    ... And that is an understatement.


    We prefer to roast our Ethiopian Konga to a City or Full City Roast.
    but as always we are happy to accommodate any roast level you prefer.

    • City Roast - Will highlight the Fruity Notes
    • Full City Roast - Will provide an overall balance, and enhanced smoothness
    • Darker Roasts - Will subdue the brightness and fruit while adding subtle, more chocolaty tones to the finish.

    enabling us to acquire a selection of the most premium lots available.

    This Heirloom Ethiopian varietal Natural Yirgacheffe coffee is produced in the Konga Zone of Yirgacheffe, above 5,905 Feet.
    A major town in south-central Ethiopia, Yirgacheffe is located in the Gedeo Zone of the Southern Nations,
    one of the most famous coffee-growing regions in the country.

    Flavor Observations
    A very nice African coffee with intriguing qualities!
    A deeper body than most, with a soft yet lively finish.

    Our Washed Burundi AA offers a deep body with a round mouth-feel.
    The aroma offers a subtle nutty quality with hints of dark fruit.

    When roasted to a Full City Roast, the cup will yield notes of lemon, black pepper, and a very nice piquant quality.
    The fruit notes are similar to a Black Currant. Nice and smooth on the front with a brighter finish.
    Our Burundi is excellent with cream!

    Roast Level / Profile Notes:
    We prefer to roast our Burundi AA to a Full City Roast as it brings out the best balance of smoothness and fruit.

    We are always happy to accommodate any roast level you prefer.
    The notes below illustrate how changing the roast will change the profile:
    • City Roast (light roast) - This roast level will highlight piquant qualities, acidity (brightness), and a bit of lemon zest.
    • Full City Roast (medium roast) - This is our Preferred Roast Level and will provide the best balance of smoothness with the deeper black currant notes. .
    • Full City (+) Roast (medium dark roast) - The gloss of "oil" will temper the acidity and fruit, deepening the body and richness.
    • Darker Roasts - Will likely over power the fruit, but could be very nice as an Espresso or for a French Press.

    Additional Information
    Although one of the smallest coffee producing regions in East Africa, Burundi has ideal conditions for growing coffee including altitude and rain.
    Through focus and investment into tree planting and facilities, the quality of Burundi Arabica coffee production has improved tremendously over the past few years.

    This exotic coffee is smooth, mild with a bit of spiciness and naturally lower in acidity!

    Flavor Observations
    This is a wonderful and unusual offering from Maui Hawaii.

    Maui Yellow Caturra offers you a clean, medium to full bodied coffee with chocolaty aromas and lower acidity.

    As the coffee cools in your cup, spicy notes of cinnamon and allspice will begin to emerge, with a very nice chocolaty finish.
    Our Maui Yellow Caturra is an overall well balanced and round coffee that you are sure to enjoy.


    Roast Level / Profile Notes:
    We prefer to roast our Maui Red Catuai to a Full City Roast to bring out the best profile and balance. Nice and smooth at this roast level.

    We are always happy to accommodate any roast level you prefer.
    The notes below illustrate how changing the roast will change the profile:
    • City Roast (light roast) - This roast level will liven up profile by highlighting the spice and complexity. This is a good choice if you prefer bright and snappy.
    • Full City Roast (medium roast) - Our preferred roast, will provide the 'sweet spot' for an all around great cup.
    • Full City (+) Roast (medium dark roast) -  This roast level will bring out the milk chocolate, dark wine notes, deepening the body.
    • Darker Roasts - Will definitely bring out the dark chocolate notes. The roast level will triumph over the natural qualities of the bean, but would be suitable for a light bodied dark roast coffee..

    Additional Information
    From Maui Hawaii, a Bourbon varietal.

    The coffee bean of the Yellow Caturra variety becomes a bright yellow when it is ripe instead of the conventional red (hence the name).
    The well balanced acidity is due to the Hawaiian volcanic soil where the coffee is grown at 500ft or more above sea level.

    All of the Yellow Caturra coffee is hand selected and naturally processed.

    Congo - Kivu Katanda - Africa
    This is a very unique and exciting coffee. Our Congo Kivu Katanda is a Bourbon and, while not as bright as some East Africans, it is definitely one not to miss! This is the kind of great coffee we have not seen out of Congo in a while!

    Flavor Observations
    A Heavy syrupy body, with complex overtones and hints of oak and spice. A wonderfully complex aroma with a soft start and finish, very easy in the cup. There is a big “mouthfeel” with this Congo.

    When roasted Darker to a Vienna, a French Press will really bring out the full boldness and syrupy body
    Our Medium Full City (+) Roast will highlight the complexities and bring out the brighter qualities.

    Additional Information
    Kivu is the general name for East Congo covering a very broad geographical area. It borders on Uganda, Rwanda, Burundi, and Lake Tanganyika on the east.
