Maui Yellow Caturra offers you a clean, mild to medium bodied coffee with chocolaty aromas and lower acidity.
As the coffee cools in your cup, spicy notes of cinnamon and allspice will begin to emerge, with a very nice chocolaty finish.
Our Maui Yellow Caturra is an overall well balanced and round coffee that you are sure to enjoy.
Roast Level / Profile Notes:
We prefer to roast our Maui Yellow Caturra to a Full City Roast
to bring out the best profile and balance. Nice and smooth at this roast level.
We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will change the profile:
- City Roast (light roast) - This roast level will liven up profile by highlighting the spice and complexity. This is a good choice if you prefer bright and snappy.
- Full City Roast (medium roast) - Our preferred roast, will provide the 'sweet spot' for an all around great cup.
- Full City (+) Roast (medium dark roast) - This roast level will bring out the milk chocolate, dark wine notes, deepening the body.
- Darker Roasts - Will definitely bring out the dark chocolate notes. The roast level will triumph over the natural qualities of the bean, but would be suitable for a light bodied dark roast coffee..

The coffee bean of the Yellow Caturra variety becomes a bright yellow when it is ripe instead of the conventional red (hence the name).
The well balanced acidity is due to the Hawaiian volcanic soil where the coffee is grown at 500ft or more above sea level.
All of the Yellow Caturra coffee is hand selected and naturally processed.
