High in the Chiapas mountains, between 3,300 - 5,000 ft., lies the 370-acre family farm of Delmar and Fernando Moreno Guillen.
For three generations, this family has been producing consistently high-quality coffee.

Their coffee is grown without the use of chemical fertilizers or pesticides, beneath an abundance of natural shade trees, utilizing all natural processes.

Aside from the breath-taking vistas, the high altitude growing region qualifies this exceptional coffee as "Strictly High Grown" which denotes a premium quality coffee (see more below on SHG).

Our Mexican Rancho San Francisco is a well-balanced coffee that is perfect for any time of day.

General Flavor Observations
Mexico - Rancho San Francisco

This is a medium-bodied coffee with a creamy, smooth mouth-feel. The acidity is medium bright, which translates to hints of peach or perhaps tangerine.

Other profile notes vary quite a bit depending upon the roast level you choose, but overall you will find a mild spiciness, an oaky nuttiness, chocolate, and a lingering finish.

In the end, you will find our Mexican San Francisco has a profile that will fall somewhere in between a full-bodied Colombian and a Guatemalan, and also makes for a superb Single Origin Espresso.

Customers preferred roast level for this lot of Mexican Chiapas is a Full City roast. I found this roast level provided an enhanced and more complex flavor profile balance.
However, each roast has something unique and wonderful to offer, so don't hesitate to experiment!

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how the various roast levels will change the profile:

City Roast (light roast)

This roast level is quite intense. You will find a very bright acidity with forward notes of peach. The body will be medium to light with a nice almond nuttiness and prominent herbal qualities.

Full City Roast (medium roast)

Full City is a very nice roast level for this coffee. Notes of chocolate and mild caramel are present in the creamy, round mouth-feel. You will also find a walnut-like nuttiness, and mild spice. The finish will be sweet and lingering with a soft, yet snappy acidity, highlighted by notes of peach.

Full City (+) Roast - Preferred

This is the roast level where the body will deepen slightly and balance out with the acidity. The mouth feel is super smooth with notes of chocolate, mild spice, and a nice smoky nuttiness. The flavor becomes almost sweet with hints of brown sugar and caramel. The silky finish tapers off slowly with hints of peach. This roast level creates a near perfect balance of attributes.

Vienna Roast

A Vienna Roast will create a deeper body and silky mouth feel. The notes of chocolate notes become more bittersweet and the acidity is very well tempered, losing most of the fruit. However, this roast level will provide a bolder, yet not too heavy, cup that is easily enjoyed.

French Roast

Not recommended.

Mexico - Rancho San Francisco

The 370 acres of the family estate is located in the highlands of the Chiapas mountains which is very well suited to the production of outstanding coffees. Chiapas is located in the southernmost region in Mexico which borders with Guatemala to the west, and Oaxaca to the east.

Strictly High Grown (SHG) coffees are particularly sought after because these extreme elevations cause a slower development of the coffee while nutrient concentrations in the soil impart a much higher quality in terms of flavor.
These higher elevations also mean the crop yield is lower and it is much more labor intensive to grow, harvest, and transport the coffee. However, the prices garnered for these SHG coffees is due to coffee's outstanding quality, and not it's production.
