This is a very nice Brazilian coffee from the Cooperativa de Cafeicultores e Agropecuaristas (COCAPEC).
The cooperative maintains processing practices that consistently yield quality coffees, while the Fair Trade certification ensures a better life for the farming families through fair wages and prices, direct trade, community development and environmental stewardship.
General Flavor Observations
Brazil Cerrado
Our Brazilian Cerrado is a very nice medium to soft-bodied coffee that has a wonderful sweetness with a round, nutty mouth-feel and notes of caramel and nougat.
The acidity is medium to low, and the overall profile provides a well-balanced and smooth experience with a gentle, tapered finish.
This is a great coffee if you are looking for a nice round mellow cup that isn't too bold or too mild, just an easy drinking cup of Joe!
Roast Level Profile Notes
Brazil Cerrado
My preferred roast level for this lot of Brazilian coffee is a
Full City roast for the best balance and sweetness.
It will do well at darker roasts too if that is your preference.
We are always happy to accommodate any roast level you prefer.
The notes below illustrate how the various roast levels will change the profile:
City Roast (light roast)
This roast level will yield a brighter cup with more complexity and character. Great choice if you want to get the most out of the origin characteristics.
Full City Roast (medium roast) - Preferred
I found this roast level to provide the best experience and balance for sweetness, creaminess, body, and mouth-feel. A great choice for drip or espresso!
Full City (+) Roast
This roast level will provide more depth, tempered brightness and chocolate notes.
Vienna Roast
Vienna roast will obscure the sweet subtle characteristics but will offer nice dark chocolate notes and smoothness.
French Roast
Not recommended.
