Honey Processed, Micro-lot Coffee, Single Family Farm

This is a very special Micro-lot Coffee from third-generation coffee grower Andrés Guaca.
Guacobia is a small, meticulously managed farm in the high mountains of Acevedo, Huila (over 5,000 ft.).
By adopting practices that lead to cleaner, more distinctive, and high-quality cups, Andrés' goal is to see his region recognized globally for exceptional specialty coffee.

General Flavor Observations
Colombia - Guacobia Honey

This lot is a single varietal, Pink Bourbon, coffee grown under partial shade and was hand-harvested at peak ripeness by a team of 8-13 pickers.
Following careful hand-sorting, the coffee cherries are fermented in sealed bags for 36-60 hours before being de-pulped and transferred to the drying station.
The coffee is then dried for 12-18 days on patios and under canopies, allowing for a slow and even development of the profile.

This represents the 'Honey Processing' style which dramatically increases sweetness, profile complexity, and prominent fruity flavors.

Colombia - Guacobia Honey is wonderfully sweet, with a round, soft mouth-feel and mellow acidity.
With the first sip, notes of vanilla are present giving way to well centered notes of milk chocolate and a marshmallow sweetness.

A truly remarkable coffee that should not be missed!

Roast Level Profile Notes
Colombia - Guacobia Honey

The sweet, fruity complexity, round body, and soft acidity of this wonderful Colombian coffee will be best realized at a Full City roast.
However, each roast level will provide unique differences to the profile, so don't hesitate to experiment.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will alter the profile:

City Roast (light roast)

Looking for a brighter cup with plenty of complexity, then our City roast is a great choice.
As with most City roasts, you will find a milder body and snappier acidity. Notes of sweet honeysuckle, Graham Cracker and hints of lime are surrounded by almond nuttiness and cocoa nibs in the cup. A very nice choice.

Full City Roast (medium roast) - Preferred

I found Full City to be the best balance all around, presenting a buttery, smooth cup with plenty of milk chocolate and marshmallow sweetness.
Hints of vanilla and perhaps apricot appear as the cup peaks, then tapers into notes of walnut or pecan.
The finish is soft and rolling with a pleasant, lingering citrus finish.
This is a complex cup with a lot going on. Magnificent!

Full City (+) Roast

This roast level will focus on deeper fruit tones and provide a more 'juicy' black tea mouth-feel.
The mouth-feel will be more silky and the body more full; the finish will be long and smooth.
The sweetness remains due to the honey process, with the fruit tones becoming more akin to prunes or raisins.

Vienna Roast

This roast has that solid dark roast quality represented by bittersweet chocolate and toasted caramel, yet the cup remains quite smooth.
The sweet fruit tones remain but are a bit more muted.
This would be a good roast profile to choose if pairing with a sweet dessert or following a rich meal.

French Roast

Not recommended.

Andrés grew up surrounded by coffee trees and has spent more than 24 years transforming both his own farm and the practices of his community.
Since acquiring Guacobia in 2008, he has shifted from traditional plantings toward high-quality specialty varieties, like our Pink Bourbon.

Today, Guacobia stands as a model of innovation, family legacy, and ongoing commitment to elevating the region's coffee.
With around 10 acres of coffee and 2 acres preserved as forest reserve, the farm maintains an impressive biodiversity.

Oh My! Recent purchase of this specific coffee and it is absolutely delicious! Joe prepared this in a Full City + and it’s amazing in a French Press. I’m certain it is just as tasty in any brewing style. You should get yourself some.

Wow!
Just arrived today and had to brew an afternoon pick-me-up. This Columbian is fantastic! At Full City, I can see it as an easy drinking, all-day type. I do not typically purchase Columbian, but the "honey" sold me, and it is definitely noticeable. Thanks for bringing it to Storehouse !

Outstanding and Unique
This is one of the most unique Colombian coffees I've tried, and I love it. The mouth feel is silky, with subtle sweetness and hints of fruit and chocolate, plus other flavors that I haven't tasted before in coffee from this part of the world. Mellow, smooth. I went with the recommended Full City roast, and it's perfect.
