Cherry, Cedar, Dark Chocolate

This is an excellent Ethiopian Sidamo offering with wonderful chocolate and berry tones.

This lot comes from a group of small indigenous farmers and is grown in the southwestern rain forests of Ethiopia.
The farmers are part of the Oromia Coffee Farmers' Cooperative Union and focus on 100% Organic and Fair Trade production.
This wonderful Oromia coffee is Heirloom, Rainforest grown, Fair Trade, and Organic!

General Flavor Observations

This is a well-balanced coffee with an above average body; a very pleasing profile.
The overall mouthfeel is creamy, and the finish soft, with lingering winey acidity.
While I found that the fruit will vary depending on the roast level chosen, in general, you will find red berries and darker stone fruits in the profile.

Clean, sweet, abundant dark chocolate, fruity, and smooth.

In short, this is a wonderful coffee with the profile I look for in Ethiopian Oromia coffees!

Roast Level Profile Notes
Ethiopia Sidamo - Oromia

Ethiopian Naturals always have an intriguing complexity about them, and it is for this reason I have selected Full City for our default roast level.
However, each roast level has something enticing to offer you.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast level will alter the profile:

City Roast (light roast)

As always, this is the choice if you're seeking to experience pure Origin Characteristics.
Brighter acidity, prominent strawberry, and a snappier, effervescent finish are nicely offset by a sweet, spicy, chocolaty base with hints of pastry dough.

Full City Roast (medium roast) - Preferred

The mouth-feel is smooth and creamy, with a vanilla sweetness.
Notes of dark chocolate abound surrounding tones of raspberry, cherry and a cedar-like spiciness.
The finish is winey, long and sweet.
A very well-balanced cup.

Full City (+) Roast

This is a great roast and will create a nice syrupy mouth-feel with deeper fruit tones and tempered acidity.
An increased sense of depth will emerge, brining out more of the dark chocolate tones and dark stone fruit tones.
This will be a savory cup, with a long, pointed finish.

Darker Roasts

While I did not quite enjoy the darker roast levels as well, if you do then don't hesitate to give the darker roasts a try!

Additional Information
Ethiopia Sidamo - Oromia

The Indigenous farmers in the Oromia Coffee Farmers Cooperative Union work together with the goal of exporting their coffee directly to the specialty market.
The coffee is naturally processed, meaning the ripe coffee cherries are dried in the sun on raised African beds for around 12-15 days.
This sun-drying process allows sugars in the cherry pulp to transfer into the bean, presenting in the cup as complex fruit flavors.
The raised beds also provide airflow to facilitate a consistent drying process.

Once the ideal moisture content is reached, the dried cherries are rested in a cool environment before being hulled, graded, and handpicked prior to export.
This coffee is grown in small plots that are under native shade trees of Birbira, Grevillea and Kobo.
Notably, this coffee is produced using very traditional, centuries-old, low input farming techniques.
