Ethiopia Sidamo - Oromia

Natural Process, Organic Practices, Small Producers

Black Currant, Mixed Berries, Milk chocolate

This is an excellent Ethiopian Sidamo offering with wonderful chocolate tones.

This lot comes from a group of small producers in Southern Ethiopia, within the Oromia regional state, and are a part of the Oromia Coffee Farmers' Cooperative Union.
Collectively, they will produce only 600 - 1,500 lbs. of harvested coffee cherries per year.

Although not certified USDA Organic, the producers utilize no chemical-based pesticides, herbicides, or fertilizers.

General Flavor Observations
Ethiopia Sidamo - Oromia

This is a well-balanced, medium-bodied coffee, with a very pleasing profile.
The overall mouthfeel is creamy, and the finish soft, with lingering winey acidity.
While I found the fruit will vary depending on the roast level chosen, in general, you will find the profile offers tones from mixed berries (at lighter roasts) to savory black currant (at darker roasts).


Clean, sweet, abundant milk chocolate, fruity, and smooth.

In short, this is a wonderful Ethiopian coffee that should not be missed!

Roast Level Profile Notes
Ethiopia Sidamo - Oromia

Ethiopian Naturals can have a wonderful complexity about them, and it is for this reason I have selected Full City for our default roast level.
However, I can wholeheartedly recommend Full City (+) as well.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast level will alter the profile:

City Roast (light roast)

As always, this is the choice if you're seeking to experience pure Origin Characteristics.
Brighter acidity, prominent mixed berries, and a snappier, effervescent finish are nicely offset by a mild chocolaty flavor and hints of pastry dough.

Full City Roast (medium roast) - Preferred

The mouth-feel is smooth and creamy, with a slight vanilla sweetness.
Notes of milk chocolate abound surrounding tones of dark berry and black currant which tapers to a soft and lingering finish.
A very well-balanced cup.

Full City (+) Roast

This is a great roast and will create a nice syrupy mouth-feel with deeper fruit tones and tempered acidity.
An increased sense of depth emerges, and the chocolate tones become slightly edgier (like Baker's chocolate), the sweetness is savory, and the finish is soft yet pointed.

Darker Roasts

Not recommended as the darker roast levels will eclipse the attributes that make this such a wonderful coffee. However, if you enjoy the characteristics a darker roast can offer, then it is worth a try!

Additional Information
Ethiopia Sidamo - Oromia

This coffee is naturally processed, meaning the ripe coffee cherries are dried in the sun on raised African beds for around 12-15 days.
This sun-drying process allows sugars in the cherry pulp to transfer into the bean, presenting in the cup as complex fruit flavors. The raised beds also provide airflow to facilitate a consistent drying process.

Once the ideal moisture content is reached, the dried cherries are rested in a cool environment before being hulled, graded, and handpicked prior to export.
This coffee is grown in small plots that are planted with traditional coffee varieties of Dega and Wulicho under native shade trees of Birbira, Grevillea and Kobo.
Notably, this coffee is produced using very traditional, centuries-old, low input farming techniques.
