Honduran El Jaguar is an outstanding coffee from the COHORSIL Cooperative.
Founded in 1980 by a small group of vegetable farmers that wanted to diversify into coffee, the cooperative was formed to improve the quality and production practices (which includes producing their own organic fertilizer by composting coffee cherries and pulp).
The COHORSIL Cooperative has been passing down these farming traditions from father to son for six generations.
Honduran El Jaguar is one of those great coffees we are always happy to find!
General Flavor Observations
Honduras El Jaguar
This is a full-bodied coffee offering a delicate aroma and intense profile.
Notes of dark chocolate permeate the cup, with highlights of oranges & honeysuckle, and hints of lemon on the finish.
The mouth-feel is round and sleek, with a mild nuttiness.
Darker roasts will bring out profile notes of caramel and fig.
Whichever Roast Level you choose, you will be well please with this great coffee.

My favorite roast level is
Full City for the best profile complexity, but
Full City (+) is very nice as well.
We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will alter the profile:
City Roast (light roast)
If you are looking for an interesting experience, our City Roast is a great choice.
While a bit herbaceous, you will find brighter fruit tones of orange and lemon (on the finish) surrounded by nutmeg, Baker's chocolate, and a lingering finish.
Full City Roast (medium roast) - Preferred
This is my favorite roast level, and where I found that great balance of profile notes and roast level.
This roast offers a nice full body with a smooth mouth-feel; plenty of dark chocolate tones highlighted by orange on the upper palate. A honeysuckle sweetness surrounds the cup with wonderful notes of lemon on the finish, especially as the cup cools. Delicious!
Full City (+) Roast
Our Full City (+) roast will provide a more silky mouth-feel, and a more intense full-bodied experience.
Dark chocolate tones are more prominent with a slight caramel sweetness. This roast will also bring out those elusive notes of fig.
The acidity will be tempered, and notes of orange and lemon (on the finish) remain.
Vienna Roast
This roast level will provide a deeper and juicier body with darker, bittersweet
chocolate notes and figs followed by a wonderful caramel sweetness and slight hints of lemon.
Great for pairing with a sweet desert.
French Roast
Not recommended.

Honduras El Jaguar
The COHORSIL Coop offers membership to all agricultural workers. In addition, they provide seedlings, compost, workshops and growing advice to the members.
The cooperative also donates a portion of its earnings to support local programs for youth and mobile medical clinics.
The Coop works to continually improve their growing practices to elevate the quality of their coffee and to share their passion for coffee with the world.
