This is a wonderful new crop Java traceable to the Java Kayumas Plantation on the Ijen Plateau in eastern Java.
Java Kayumas is fully washed and provides a mild to medium bodied cup that is clean, and smooth with hints of chocolate and spicy character.

General Flavor Observations
Java Kayumas coffee offers an exotic flavor profile, the rich, smooth body, wonderful aromatics, and low acidity.
While brewing, the aroma will fill the room with exotic spice and herbs.
The body is soft, buttery, and smooth with an incredible highlight of cinnamon on the finish.
The mouth-feel is round and inviting, with notes of baker's chocolate and toffee.
There is a hint of light honey sweetness at the lighter roasts, with darker roasts yielding the more syrupy body.
The finish is long and smooth, just as you would expect.
This Java Kayumas is an elegant Indonesian coffee to be sure, and not one to miss.
Roast Level Profile Notes
While Java is a coffee that does quite well at most roast levels, I prefer a Full City
roast as it provides the best overall balance of qualities.
We are always happy to accommodate any roast level you prefer.
City Roast (light roast) - Preferred
With this roast, you are going to get a lot of herbal qualities and subtle earth; it's just the nature of this light roast. The chocolate tones will be like cocoa nibs. The overall experience will be more tea-like, with hints of almond, peach, and vanilla. The body is still smooth and the finish a bit crisper with definite notes of cinnamon.
If you want to experience pure Origin Characteristics, then this is a good choice.
Full City Roast (medium roast)
For the best balance of body, spice, and acidity, this is the sweet spot.
The first impression is the exotic aroma, followed by notes of toffee and baker's chocolate. The mouth-feel is buttery and honey sweet; the body full, and the finish is soft with notes of cinnamon.
I really love the coffee at this roast, and it makes for an incredible Single Origin Espresso.
Full City (+) Roast
Our Full City (+) roast will add more depth and silkiness to the profile. A sweet and smooth mouth-feel is complimented by caramel/toffee, darker chocolate, and a hint of nuts and cinnamon on the lingering finish.
This will be a silky-smooth cup with nice exotic spice that will do well with milk for extra creaminess, and one that many will prefer.
A Vienna roast will provide a bolder, fuller body, with plenty of dark chocolate, spice, and extremely low acidity. The cinnamon notes will be lost, but you will gain an impressively deep cup with a long syrupy finish.
Great as an after dinner coffee or with dessert.

Contemporary coffee production is at present done in the highlands where the high altitude and volcanic soil provide ideal growing conditions.
The Jampit Estate was originally established by the Dutch in the 18th century, although it is now run by the government.
Unlike most coffee processing from Indonesia, the coffee from the Jampit Estate is fully washed, which creates the elegant, clean, balanced profile you can experience today.
