This is new crop, Natural Maui Red Catuai, that offers a full body, round mouth-feel and a soft, sweet finish.
General Flavor Observations
Maui Red Catuai
Hints of burgundy, soft chocolate tones, a nutty sweetness, and mild spice come together for a very well-rounded and balanced cup.
If you are seeking a Hawaiian coffee with good depth and body with a bit of a character, then look no further!
Roast Level Profile Notes
Maui Red Catuai
I prefer a
Full City roast for this Maui Red Catuai to bring out the best profile and balance where the coffee is nice and smooth.
We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will alter the profile:
City Roast (light roast)
This roast level will liven up the profile by highlighting the spice and wine notes. This is a good choice if you prefer
Full City Roast (medium roast) - Preferred
A Full City roast will provide the 'sweet spot' for an all-around great cup, with a very nice body and mouth-feel. The chocolate tones are balanced by a round nuttiness, and subtle spice. The finish is smooth with lingering hints of burgundy-like crispness.
Full City (+) Roast (medium dark roast)
This roast level will bring out darker chocolate notes, the deep red wine notes, tempered acidity, and a more velvety mouth-feel and finish.
Darker Roasts
I can't really recommend a roast darker than Full City (+) for Maui Red. Vienna and French would overpower nearly all the origin characteristics. However, if you are a fan of dark roasted coffee, then give it a go!

Maui Red Catuai
The Red Catuai is a semi-dwarf bean that is a cross between the Caturra and Mundo Novo varietal's.
The well-balanced acidity is due to the Hawaiian volcanic soil where the coffee is grown.
All Red Catuai coffee is hand-picked.
