Mexico Chiapas - Turquesa

Shade Grown, Washed, Patio Dried

Hints of Woodiness, Spice, and Chocolate

This wonderful Chiapas is grown high in the Chiapas mountains, between 3,300 - 5,000 ft., just outside the region of Soconusco.
This lot of Chiapas Turquesa coffee has been developed and grown by smallholder farmers that are descendants of Indigenous tribes.
These farmers plant, harvest, and prepare the coffee by hand, sparing no effort to ensure a coffee that is impressive and beautiful.

Aside from the breath-taking vistas, the high altitude growing region qualifies as "High Grown" which denotes a premium quality coffee (see more below on High Grown).

Our Mexico Chiapas Turgquesa is a well-balanced coffee that is perfect for any time of day.

General Flavor Observations
Mexico Chiapas - Turquesa

This is a medium bodied coffee with medium acidity, and light hints of oak-like woodiness and spice.

While the profile can undergo minor variations, depending upon the roast level you choose, overall you will find a mild spiciness, an oaky nuttiness, chocolate, and a lingering finish.

In the end, you will find our Mexican Turquesa will provide for a superb cup!

Roast Level Profile Notes
Mexico Chiapas - Turquesa

My preferred roast level for this lot of Mexican Turquesa is a Full City roast. I found this roast level provided an enhanced and more complex flavor profile balance.
However, each roast has something unique and wonderful to offer, so don't hesitate to experiment!

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how the various roast levels will change the profile:

City Roast (light roast)

This roast level will offer a very bright acidity with forward notes of grape. The body will be light, with a nice almond nuttiness and prominent herbal spice qualities.

Full City Roast (medium roast) - Preferred

Full City is an excellent roast level for this coffee. As expected, wonderful notes of chocolate and mild caramel are present wrapped in a creamy, round mouth-feel. You will also find a slight almond nuttiness, and oaky spice. The finish will be sweet and lingering with a soft, yet snappy acidity, highlighted by notes of subtle hints of grape.

Full City (+) Roast

This is the roast level where the body will deepen and the acidity will soften. The mouth feel is super smooth with notes of dark chocolate, mild oaky spice, and a nice smoky nuttiness. The flavor becomes almost sweet with hints of brown sugar and caramel. The silky finish tapers off slowly. This roast level creates a near perfect balance of attributes.

Vienna Roast

A Vienna Roast will provide a deeper body and silky mouth feel. The chocolate notes become more bittersweet and the acidity is very well tempered, losing most of the fruit. However, cup will come across as bolder, yet not too heavy, with a lingering finish; a cup that is easily enjoyed.

French Roast

Not recommended.

Mexico Chiapas - Turquesa

This lot of Mexico Chiapas Turquesa is shade grown from the southern mountains of Chiapas, outside Soconusco.
The growers of the Mexico Chiapas Turquesa produce a variety of Bourbon, Caturra and Catuaí varieties and transport their parchment to the wet mill in Tapachula.

High Grown coffees are notable for their excellent cup profile due to the extreme growing elevations which cause a slower development rate of the coffee.
This slower development, along with the nutrient rich soil, imparts a higher quality and flavor complexity to the coffee.
These higher elevations also mean the crop yield is lower and it is more labor intensive to grow, harvest, and transport.
