Very Smooth, Milk Chocolate, Brown Sugar, Sweet

From the highlands of Chiapas Mexico, we are pleased to offer this superb Fairtrade Organic coffee from Cooperativa de produccion Tzeltal-Tzotzil.

The cooperative is operated by two people groups, Tzeltal and Tzotzil, who are descendants of the earliest and largest Mesoamerican Mayan cultures.

The individually owned coffee farms average less than ten acres in size and focus on organic production methods to protect their environment, increase overall quality, and to gain higher income to improve the livelihood of their families.

We are very excited to be able to offer you this wonderful coffee!

General Flavor Observations
Mexico Tzeltal Tzotzil - FTO

This is a sweet, medium-bodied coffee with a smooth mouth-feel and a soft, yet crisp, finish.

The profile offers a delicious milk chocolate base, surrounded by creamy mouth-feel, brown sugar sweetness, and a nice orange finish.
The acidity is pleasantly bright and perfectly compliments the cup.

Mexico Tzeltal Tzotzil can be enjoyed at nearly every roast level; you will not be disappointed.

Roast Level Profile Notes
Mexico Tzeltal Tzotzil - FTO

My preferred roast level for this coffee is a Full City roast, but each roast has something unique and wonderful to offer, so don't hesitate to experiment!

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how the various roast levels will change the profile:

City Roast (light roast)

This roast level will produce a milder, nutty cup with notes of cocoa nibs and herbal qualities.
The overall mouth-feel is light, yet smooth. The finish will be crisp with a tangerine sweetness.

Full City Roast (medium roast) - Preferred

Full City is a very nice roast level for this coffee.
A solid base of milk chocolate is forefront, surrounded by a smooth, round mouth-feel highlighted by a brown sugar sweetness and mild hints of nuts and vanilla.
The finish is long and sweet with a soft acidity that is highlighted by orange tones.

Full City (+) Roast

A Full City (+) roast will deepen the body and temper the brightness.
The mouth-feel is silky smooth with notes of darker chocolate and a nice smoky nuttiness.
The sweetness becomes more like toasted caramel, with a lingering soft finish.

Vienna Roast

A Vienna Roast will create a rich, deep body and syrupy mouth feel.
The notes of chocolate become more bittersweet and the acidity is very well tempered, losing most of the fruit.
This roast level will provide a bolder cup that isn't too heavy, and is easily enjoyed.

French Roast

Not recommended.

Mexico Tzeltal Tzotzil - FTO

Mexico Tzeltal Tzotzil Fairtrade Organic coffee is not only hand-picked by individual producer members, but the coffee is processed within their respective farm-owned micro mills!

The Tzeltal call themselves Winik atel, which means "Working Men", or as the ?batzil'op? - ?those of the original word?, referring to the Mayan oral tradition.
They are largest indigenous ethnicity within the state of Chiapas who speak the language.

The Tzotzil territory is to the west of the Tzeltals.
The Tzotzil language and culture are descended from early Mayan as well.
Originally, Tzotzil meant "bat people" or "people of the bat" in the Tzotzil language, but today the Tzotzil refer to their language as Bats'i k'op, meaning "true language".
