Mexico Union Ramal Santa Cruz Fairtrade Organic is the work of 488 farmers in Fraylesca, in the Chiapas region of Mexico.
High in the Chiapas mountains, between 2,953 - 5,906 ft., Fraylesca is part of the El Triunfo Ecological Reserve where this wonderful coffee is cultivated under rich forest shade.

General Flavor Observations
Mexico Union Ramal Santa Cruz - FTO

This is a medium, to soft-bodied coffee with a creamy, smooth mouth-feel.

The profile offers a solid, chocolaty base, surrounded by creamy mouth-feel, honey sweetness, and a nice lingering finish.
The acidity is pleasant and delicate, which translates to hints of grape at our lighter roasts.

I believe you will find this Mexico Union Ramal Santa Cruz to be delicious at every roast level and well suited for any time of day.

Roast Level Profile Notes
Mexico Union Ramal Santa Cruz - FTO

My preferred roast level for this lot of Mexican Chiapas is a Full City roast, but each roast has something unique and wonderful to offer, so don't hesitate to experiment!

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how the various roast levels will change the profile:

City Roast (light roast)

This roast level will produce a mild cup with notes of cocoa nibs, a nice almond nuttiness and herbal qualities.
The overall mouth-feel is light, yet smooth. The finish will be crisp with a grape-like sweetness.

Full City Roast (medium roast) - Preferred

Full City is a very nice roast level for this coffee.
Solid notes of chocolate and honey are forefront, surrounded by a creamy, round mouth-feel.
You will also find mild hints of nuts and vanilla. The finish will be sweet and lingering with a soft acidity, highlighted by elusive notes of grape.

Full City (+) Roast

This is the roast level where the body will deepen slightly and temper the brightness.
The mouth-feel is silky smooth with notes of darker chocolate, and a nice smoky nuttiness. The sweetness becomes more like brown sugar and caramel, with a lingering, yet soft finish.

Vienna Roast

A Vienna Roast will create a deeper body and syrupy mouth feel.
The notes of chocolate become more bittersweet and the acidity is very well tempered, losing most of the fruit.
This roast level will provide a bolder cup that isn't too heavy, and is easily enjoyed.

French Roast

Not recommended.

Mexico Union Ramal Santa Cruz Fairtrade Organic coffee is not only hand-picked, but the beans are washed by individual producer members within their respective micro wet mills, then sun dried on patios.

The El Triunfo Ecological Reserve (where this coffee is grown) lies between the flatlands of the Central Depression of Chiapas and the peaks of the Sierra Madre Mountain chain.
The Biosphere Reserve is a diverse evergreen cloud forest that is home to several threatened species (namely Geoffroy’s spider monkey, margay, jaguar and puma) and is critical for bird migration patterns.

Warm, sub-humid climate, heavy rains, and stable temperatures make the area ideal for agriculture of all kinds, particularly coffee.

Union Ramal Santa Cruz is an organization of Organic producers which was founded in 2001.
Presently, 36 percent of its members are female, and 11 percent of its total membership is under the age of 30!
