This is an outstanding lot of new crop Sulawesi (Celebes) Toraja traceable to smallholder farmers in the Utara village located in the Tana Toraja district of Sulawesi.
These smallholder farmers are families in the village who actually shade grow the coffee in plots around and near their homes.
You can know with certainty that purchasing this crop of Sulawesi will have a direct and positive impact on these families.
General Flavor Observations
Sulawesi (Celebes) Toraja
This Sulawesi Kalosi is exceptionally smooth with complex flavors of spice and herbs that are mingled with deep chocolate and caramel undertones.
The body is huge and rich with a mouth feel that is full and creamy.
The aroma is spicy with notes of oak, and the finish is silky and smooth.
As with most Indonesian coffees, the acidity is very mild at any roast level.
No other Indonesian coffee is quite like a great Sulawesi. Spectacular!
Roast Level Profile Notes
Sulawesi (Celebes) Toraja
Sulawesi is one of those coffees that works great at almost every roast level.
We chose the
Vienna Roast as our default simply because that is the one that is ordered most frequently,
However... I personally prefer this wonderful coffee at Full City or Full City (+).
We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will change the profile:
City Roast (light roast)
With this roast, you are going to get huge herbal qualities, a bit of melon, a snappy acidity, and a crisp finish. Still very smooth, but lacks the depth of the other roasts levels. If you want to experience pure Origin Characteristics, then this is a good choice.
Full City Roast (medium roast)
I really love this roast level for this coffee. Heavy body and incredibly smooth. Nice notes of a milk chocolate, caramel, perhaps some black cherry, forest floor, and spice. Smooth, smooth, smooth!
Full City (+) Roast
If you are seeking more of a bakers chocolate, a more syrupy mouth feel and silky smoothness, with notes of tobacco and spice (cinnamon and cardamom), then this will be a great roast for you. The finish is silky smooth.
Vienna Roast
Deep, heavy, syrupy body, dark chocolate, extremely mild acidity and all with the complexity and spice!
This is the long standing favorite roast level of our customers for this coffee.
French Roast
While you will sacrifice some of the spiciness and complexity, a French roast will yield that deep, rich, strong 'after dinner' coffee that will provide a satisfying and lingering quality you would savor.

Sulawesi (Celebes) Toraja
Our Sulawesi Kalosi is grown in the mountains in the center of the island of Sulawesi in an area known as Toraja.
Kalosi is the small town in central Sulawesi and has become a common designator for many Sulawesi coffees.
Many still refer to it as Celebes, which was the old Dutch colonial name for the island.
This is a 'highland' as it is grown at altitudes 4,922 ft. or greater above sea level in very rugged terrain.
