General Flavor Observations
Yemen Mocca Peaberry - Sana'a

If you are looking for a more traditionally rustic Yemen coffee with complexity and wildness, then this is the coffee for you!

The aromatics of exotic spice, dry cinnamon, cardamom, and figs are abundant while grinding and brewing.
The body is quite full, rustic, spicy, and yet surprisingly smooth.
The brightness is fairly pointed with a nice, dry, almost white-wine finish.

An impressive range of attributes is present from chocolate, cedar, tobacco, nutmeg, figs, Turkish apricots, lemongrass, and more, depending on the roast level you choose.

*** Notes for Best Full Flavor ***

I found that adding about 10% more coffee than I would normally, greatly improved the overall cup experience.
While my normal ratios still provided a great cup, the additional 10% provided more depth, complexity, and full flavor.

My recommendation - add 10% more, you won't regret it.

Roast Level Profile Notes
Yemen Mocca Peaberry - Sana'a

I love the rich, complexity of Yemen coffees, and it was difficult to choose between City and Full City for the recommended roast level.
In the end, I chose Full City because I felt a City roast might be a bit intense if you are new to Yemeni coffees.

We are always happy to accommodate any roast level you prefer.
The notes below illustrate how changing the roast will alter the profile.

City Roast (light roast)

If you are familiar with coffees from Yemen and seek to maximize the full range of complexity the coffee can offer, then this is the right roast to choose from.
You will find a complex mix of eastern spices, cedar, mild cocoa, figs, brazil nut, apricot, and lemongrass.
Yemen Mocca Peaberry is intense but absolutely wonderful in this light roast.

Full City Roast (medium roast) - Preferred

This roast level will provide a rustic and complex experience, with a nice earthiness, surrounded by exotic spices, notes of cedar, almond, cocoa, and figs.
The body is full and round, perfectly balanced with a snappy acidity. The finish is smooth with lingering spice and notes of apricot emerge as the cup cools. Wonderful complexity abound.

Full City (+) Roast

This roast level will offer you increased depth and a more syrupy mouth-feel.
The fruit tends toward a dark berry, raisin-like tone, or perhaps prune.
Notes of darker chocolate, tobacco, and walnut emerge, which compliment the existing spice and cedar.
The finish will be long and smooth, with a nice brightness. Again, the fruit tones tend to develop as the cups cools.

Vienna Roast

This roast level has that solid dark roast quality, yet remains very smooth.
The body and mouth-feel will seem heavier with abundant notes of dark chocolates. The finish is long and pointed.
While some fruit tones may remain, they will be noticeably muted.

French Roast

This roast level is pushing the value point as it will nearly eclipse the characteristics of this fine Yemen Mocca Peaberry. In all honesty, I cannot recommend a French roast.

Yemen Mocca Peaberry - Sana'a

This Yemen Mocca Peaberry was sourced from family-owned plots located in the Al-Haimah districts in the Sana'a governorate within the western highlands of Yemen, that parallels the Red Sea.

This Mocca Peaberry is the product of 23 producers who work closely with an export company called Pearl of Tehama.
This collaboration has enabled the small producers to improve their processing techniques which, in turn, provides greater consistency in the quality of their coffee.

In addition to providing localized receiving warehouses to ease the burden of transporting coffee and to ensure safe storage, Pearl of Tehama also helps farmers to organize formally as a recognized producer, allowing them to solicit international assistance infrastructure improvements including, schools and water systems.
